Baked eggs with potatoes, mushrooms & cheese

Ingredients

 · 3 cubed potatoes
 · 1 tablespoon oil
 · 600 g mushrooms
 · 2 garlic cloves
 · 2 tablespoons thyme leaves
 · 140 g cheddar
 · 4 eggs

Preparation

Preheat oven to 200°C. Put the potatoes in a pan of water, cook for five minutes and drain. Heat the oil in a frying pan. Cook potatoes, mushrooms and minced garlic for about eight minutes to soften the mushrooms and let brown the edges of the potatoes. Stir in half the thyme and cook for one minute. Spoon the potato mixture into a baking dish and sprinkle with the cheese and the remaining thyme. Make holes in the mixture and break in eggs. Bake in the oven for 12-15 minutes and serve.
