Broccoli Lemon Chicken with Cashews

 · 1 tablespoon oil
 · 340 g chicken fillets
 · 2 garlic cloves
 · 200 g stem broccoli
 · 200 ml chicken stock
 · 1 teaspoon corn flour
 · 1 tablespoon honey
 · Half lemon zest
 · 1 lemon juice
 · Handful of roasted cashews

Heat the oil in a frying pan. Add the chicken and fry for four-five minutes until golden. Remove from the pan and add the garlic and broccoli. Stir fry for a minute or so, and then cover and cook for two minutes more, until almost tender. Mix the stock, corn flour and honey well, then pour into the pan and stir until thickened. Tip the chicken back into the pan and let it heat through, then add the lemon zest and juice, and cashew nuts. Stir, and serve straight away with rice or noodles.
