Hummus

Ingredients

 1 cup dried chickpeas
 1 lemon juice
 12 garlic cloves
 ½ tsp cumin
 5 ½ tbsp baking soda
 · Salt to taste
 · Olive oil
 Parsley

Preparation

Wash the chickpeas, place them in a pot of water with a tablespoon of baking soda and let them soak overnight. The next day, wash them and put them in a pot of fresh water to soak for a few hours. Thoroughly wash the chickpeas, put them in a pot filled with water and then, add rest of the baking soda. Cook for two hours, until the chickpeas are tender. During cooking, remove any foam that comes to the surface. Once cooked, strain the chickpeas but reserve the cooking water. Grind them in a food processor and let them cool a bit. Add the remaining ingredients and grind to the desired texture. Serve warm, topped with olive oil, and garnished with chopped parsley.
