Moroccan Lamb & Mint Pizza

Ingredients

 · 1 pizza base
 · 2 lamb sausages with rosemary and mint
 · 2 tablespoons tomato passata
 · 250 g mozzarella, cheddar & parmesan (combined)
 · 3 tablespoons chopped pistachios
 · ½ cup yoghurt
 · 6-8 mint leaves, to serve

Preparation

Preheat the oven to 250°C. Remove the sausage meat from skins into a medium size bowl. Discard skins. Spread the pizza base with tomato passata. Place teaspoonful amounts of sausage meat evenly over the pizza. Scatter with a good of mozzarella, cheddar and parmesan to evenly cover the base. Place the pizza in the oven for 15 minutes or until the cheese is melted, sausage is cooked through and the base is crispy. Remove from the oven, spoon over dollops of natural yoghurt and scatter over chopped pistachios and mint leaves. Serve immediately.
