Position rack in middle of the oven; preheat to 190°C. Line a baking sheet with parchment paper. Whisk egg and salt in a bowl. Stir in peanut butter, brown sugar and chocolate chips until combined. Place slightly rounded tablespoons of dough about two inches apart on the prepared baking sheets. Use a fork to flatten each cookie. Bake the cookies until just set, 10 minutes. Let cool on the pan for five minutes, and then transfer to a wire rack to cool completely. Repeat with the remaining cookies.
