2 tbsp ready-made tomato Pasta sauce
125 g ball mozzarella, drained, patted dry and thinly sliced

Toast bread until golden and crisp. Lay tomatoes or sauce over two slices of bread. Top with slices of mozzarella and a slice of grilled chicken. Lay other piece of toast on top, press lightly together. Put one sandwich on a plate, microwave on high for 45 seconds, then repeat for second sandwich.
