Prawn & Chorizo Quesadilla

  1 tablespoon olive oil
  1 red onion
  1 red pepper
  70 g chorizo
  2-3 garlic cloves
  1 tablespoon chipotle paste
  ½ teaspoon cumin
  ½ teaspoon ground coriander
  100 g prawns
  1 lime
  2 flour tortillas

Heat the oil in a pan. Fry the onion and pepper for 10 minutes. Add the chorizo and fry for five minutes more. Stir in the garlic, chipotle paste, cumin, ground coriander and prawns, and then fry for two minutes. Add the lime juice and season. Spread the mixture over one tortilla and top with the second tortilla. Heat a frying pan over a high heat. When hot, add the quesadilla and cook on each side for two minutes. Cut into four pieces and serve with guacamole, if you like.
