Som Tam (Papaya Salad)

Ingredients

 · 1 green raw papaya
 · 4 long beans
 · 6 garlic cloves
 · 8 cherry tomatoes
 · 6 red or green chilies
 · 2 tablespoons sugar
 · 3 tablespoons lime juice
 · 2 tablespoons fish sauce
 · 3 tablespoons ground peanuts

Preparation

Peel and seed papaya and shred it. Put it in a bowl. Crush garlic with a pestle and then, add long beans and tomatoes and pound a few times for it to release juices. Add the chilies and crush lightly to release the heat. In a cup, dissolve the sugar in the lime juice and fish sauce. Mix all ingredients together and toss well. Remember to not add salt as the fish sauce or soy sauce has enough salt. Serve in a shallow bowl and top with fresh lettuce, green beans, lime wedges and chilies.
